If you like beets you will love this. If you don’t like beets, even after trying this, nothing will change your mind.
When I bought these at our Beaverton farmers market they were so fresh there was still dirt clinging to their roots. As they were roasting in the oven a plan for creating this salad was forming in my head. I had beautiful oranges at the ready. As I thought through the colors, flavors and texture I realized in an instant that I needed pomegranate seeds. I jumped in the car and checked the time on the dashboard. As I drove to the store I wasn’t even sure if pomegranates were in season yet. Fifteen minutes later I was home, fresh pomegranate in hand.
Golden beets will turn red if they mingle with their red beet friends. You can roast them together but if you want to preserve the golden beet’s beautiful color, you should separate them as they cool. Slice them on different cutting boards and only combine them when you assemble the salad.
Beet salad with oranges and pomegranate seeds, dressed with orange vinaigrette à la tango-mango. Note: What you see in this picture shows only about two-thirds of the salad. The rest was consumed by me before I arranged the platter.
To prepare beets you will need:
- 1 bunch baby red beets
- 1 bunch baby golden beets
- Olive oil
Preheat oven to 350 degrees F.
Drizzle olive oil over beets and rub them so that beets are covered with oil. Place them in a foil or parchment-lined casserole dish. Cover with foil. Bake beets for 40 minutes or until tender when pierced with a roasting fork. If fork does not go in easily, return to oven for a 5 to 10 minutes more.
- Roasted, cooled beets peeled and cut into 1/4-inch slices
- 1 naval orange, cut into supremes
- Pomegranate seeds from 1/4 of a pomegranate
- Fresh parsley leaves for garnish
Orange vinaigrette ingredients:
- 1/4 cup plus 1 tablespoon freshly-squeezed orange juice (approximately one large orange)
- 1 tablespoon cider vinegar
- 1/2 teaspoon kosher salt
- 1/2 teaspoon honey
- 3/4 cup extra virgin olive oil
Prepare vinaigrette by whisking together orange juice, salt and honey. Emulsify the dressing by slowly pouring in olive oil as you continue to whisk.
On platter or in bowl, arrange beets and oranges, tucking in parsley occasionally. Drizzle some of the dressing over salad.

1 banana, roughly chopped
4 or 5 strawberries
1/2 cup fresh blueberries
1 small peach, peeled and roughly chopped
1 heaping cup (or more) fresh spinach leaves, thoroughly rinsed
splash vanilla soy milk
1 tablespoon Greek yogurt
2 teaspoons honey
1/2 cup crushed ice
Place all ingredients in a blender and blend until smooth. Serve immediately.
